Went for a wander round the horse's field with 2 dogs today basically to check for holes, we've got a problem with badgers leaving the occasional, potential leg breaking holes. Taz was doing his whirling dervish act, although he's 7years old he still behaves like a juvenille delinquent rolleyes.gif Bic was working through a rough grass/nettle patch & totally ignored me when I called him although I couldn't see anything, the way he was acting I knew something was there. By now Taz had calmed down & joined him, they flushed out about 8 or 9 pheasant which flew off in various directions with 2 lurchers in hot pursuit for about 10yards they both stopped & watched where the pheasant landed. I had to keep a wary eye on the horse as he sometimes tries to join in & he's kicked 1 of the dogs in the past.
Taz took off like a bat out of hell(he can use his brain sometimes)when he saw 1 land in the field & caught it, unfortunately by the time I reached him it was in a sorry state sad.gif Bics selected pheasant landed close to a hedge & escaped, all he caught was a few brambles sad.gif laugh.gif

It depends on how much of the pheasant is left after Taz has caught it laugh.gif
I usually casserole it, you can also roast them. As far as taste goes some people prefer to hang them for a few days to give them a stronger taste but I use them straight away.

I use them straight away as well. I roast them but they dry out quickly so I wrap them in bacon and keep basting. We had pheasant last Christmas for the first time. My dad said you'll need one each ohmy.gif . We were like weebles wobbles by the time we'd finished biggrin.gif. They freeze well too.
